The benefits of whole grains are well established. A 10-year Harvard University study was reported in the American
Journal of Clinical Nutrition. It involved more than 75,000 women and showed that those who eat 2.5 servings of whole-grain foods
daily may reduce their risk of heart disease by 30 percent, compared with women who eat almost no whole grains. The benefits
come not only from the fiber of whole grains, researchers think, but also from phytochemicals that are removed from refined grains.
